Avocado Chicken Wraps
This avocado chicken wrap is an excellent choice for lunch. I think you will find it easy to make, and the effort to gather all the ingredients together is well worth the reward of this treat at lunch time. An added benefit comes from the avocados that are great for your skin and hair.
Makes 4 servings
Use the plantain wrap recipe.
1lb chicken breast, cut into strips
1 avocado, chunks
1 onion, thinly sliced
1 tomato, sliced
2 cup spinach leaves
3Tbs olive oil
1 clove garlic, minced
1 tsp fresh parsley, chopped
Sea Salt & Pepper
In a large skillet, heat 2Tbs oil over medium heat. Add chicken, garlic and parsley and cook chicken thoroughly. Remove from heat, and set aside.
In a medium bowl, combine vegetables and salt & pepper. Toss with olive oil to coat.
On a wrap, place ¼ of the cooked chicken. Then add some of the salad mixture. Wrap up and enjoy!
For an added kick, spread a bit of the homemade hummus on the wrap before adding the chicken. Yum!
