Making your own maple banana granola bars ensures that you will have yummy snacking without having any of the preservatives or extra sugars that cause health issues. This will allow you to have a healthy energy boost at work, without feeling guilty.
Maple Banana Granola Bars
Makes about 8 granola bars
½ cup almonds (chopped)
1 cup oats (old fashioned rolled…not instant)
2 Tbs white sesame seeds
1Tbs chia seeds
¼ cup chocolate shavings
2 bananas, mashed (yellow, some brown spots are ok)
1 Tbs raw, organic honey
1 Tbs molasses
2Tbs coconut oil
½ tsp vanilla extract
¼ cup cranberries (or blueberries)
In a large bowl, combine oats, nuts, chocolate shavings, and seeds. Set off to the side for later.
Preheat over to 325°F and line a loaf tin with wax paper or parchment paper
In a medium bowl, mix all wet ingredients together. Then add the wet mixture to the dry mixture. Add in the berries and fold them in as to not crush them.
Put the batter in the loaf tin and spread to an even layer. Bake in the oven for 30-40 minutes or until you see a golden brown crisp. Remove from the oven and cool completely. Cut into bars or squares and keep in the refrigerator until ready to serve.
